Who would have thought that? You can make a damn awesome, fresh and drinkable red wine out of Dornfelder and Portugieser if you treat them more like Beaujolais and less like Cabernet and co. Macération Carbonique makes it possible. The grapes for the Cuvée rot come from a western slope in Dolgesheim, where the grapes ripen relatively slowly, develop wonderfully ripe fruit aromas, but later only little sugar, or alcohol.
